Super Bowl Sunday Snacks


There are two things that I love about Super Bowl Sunday: it was the day that I met Luke way back when and the Super Bowl Sunday Snacks. I love them both, differently, but for today’s purposes we are going to talk about the snacks. Super Bowl is the perfect excuse to make delicious snacks that last all day and basically make up all three meals. I am talking about nachos, wings, twice baked potatoes, and of course guacamole. 


I wanted to share with you my recipe for guacamole. It is pretty simple but seriously delicious. Guacamole can get people very opinionated. I am one of those people. I like mine chunky, with tomato, onion, and lots of lime juice and salt. Simple and delicious. I throw in a jalapeno for some heat. Nothing fancy, but seriously perfect in my opinion.

Here is my recipe – it serves about 4 or to be honest maybe just myself:

  • 4 ripe avocados
  • juice of 2 limes
  • 1/2 jalapeño, seeds removed and finely chopped
  • 1 Roma tomato, seeds removed and chopped
  • 1/2 white onion, chopped
  • 1 1/2 teaspoons salt (more to taste)

Remove the flesh from the avocados and place in bowl. Pour juice of limes over avocado. Add jalapeno, tomatoes and onion and combine. Add salt, stir and taste. Add more salt or lime juice if necessary.
